
Ukrainian Varenyky with Potato & Mushrooms
Classic Eastern European dumplings filled with creamy mashed potatoes and sautéed mushrooms. Perfect as a hearty lunch or dinner, served with sour cream or extra fried onions for added flavor. Note: 1 serving = 4–5 dumplings.

In a large bowl, combine flour and salt. Make a well in the center.

Add eggs, oil, and water. Knead into a smooth dough. Wrap in plastic or cover and let rest 30 minutes.

Boil potatoes in salted water, mash into smooth puree.

Finely chop mushrooms and onion. Sauté onion until golden, add mushrooms and spices, cook until liquid evaporates.

Mix mashed potatoes with sautéed mushrooms and onion.

Roll dough, cut into circles, fill with mixture, seal edges.

Boil dumplings in salted water for 3–5 minutes after they float to the surface.
