Dumplings with a mushroom filling
Authentic Poltava dumplings with mushroom sauce and filling - for true Cossacks

Dissolve the yeast in warm water with sugar and leave in a warm place for 10 minutes.

Warm the kefir, add baking soda and salt, mix well, then combine with the yeast mixture.

Gradually add flour and knead a soft dough. Cover with a towel and let it rise.

Peel and finely chop the onion. Boil the mushrooms and cut them into small pieces.

Fry the onion in oil until soft, add the mushrooms, and cook until the moisture evaporates. Season with salt and pepper.

Roll the dough into a log, cut it into equal pieces, and flatten each piece.

Place some mushroom filling inside and seal into dumplings.

Steam the dumplings for about 10 minutes.

For the sauce, mix mayonnaise with minced garlic, water, salt, and pepper.

Serve the dumplings topped with the sauce.
