
Ukrainian Benderiky with Chicken & Mushrooms
Traditional Ukrainian crispy crepes filled with a savory chicken and mushroom mixture. Golden on the outside and juicy inside, these benderiky are perfect for breakfast. Note: 1 serving = 2–3 benderiky.

In a bowl, mix eggs with sugar and salt. Gradually add sifted flour.

Whisk well and slowly pour in lukewarm milk, mixing constantly to avoid lumps.

Add oil, mix again, and let the batter rest for 15 minutes. (If needed, blend to remove lumps.)

Heat a frying pan, add a bit of butter, and cook thin crepes on medium heat for 2–3 minutes per side.

For the filling, finely chop onion, chicken, and mushrooms.

Fry onion first, then add chicken and mushrooms. Cook until done. Season with salt and pepper.

Add grated cheese and mix until slightly melted.

Cut each crepe in half. Fold one edge, spread a little mayonnaise.

Add filling and fold into a triangle shape, tucking the edge inside.

Optionally, fry the benderiky in butter until golden and crispy.
